A Lovely Beet Tzatzaki
Tzatziki is a refreshing Greek classic traditionally made with cucumber, but I love giving it a colorful twist using freshly grated beets. They add vibrant color, a touch of natural sweetness, and a boost of nutrients — all without overpowering the creamy, tangy yogurt base. If you prefer a deeper, earthier flavor, roasted beets work beautifully too. This dip is light, wholesome, and perfect served with crisp crudités, warm pita, or alongside my protein-packed gyro platter. It’s proof that healthy eating can be both simple and beautiful.
Ingredients
- 1 medium beet peeled and grated or finely chopped
- 1 cup plain Greek yogurt full fat or 2%
- 1 small garlic clove minced or grated
- Zest of 1 lemon
- Juice of ½ to 1 lemon to taste
- 1 tablespoon extra-virgin olive oil
- ½ tablespoon honey or maple syrup optional, to taste
- 1 tablespoon fresh dill chopped (or more to taste)
- Salt and black pepper to taste
Instructions
Combine
- In a mixing bowl, combine everything togerther. Stir well and taste to your liking.
Serve
- Spoon over your turkey meatball gyro plate, use as a dip with crudités , enjoy with warm pita.
