Blue Coconut Water

I grew up in Thailand, where fresh, sweet, and affordable coconut water was simply part of daily life.
Now that I live in New York City, it’s impressive to see how coconut water has made its mark as a healthy (though quite pricey) drink. It gives me a deep sense of pride in my motherland!

As a chef, I always look for ways to elevate what I love.
Here, I’ve turned a clear, natural super-drink into a gorgeous, vibrant concoction that’s even more refreshing — and even more nutritious.


Step 1: Make the Blue Butterfly Pea Tea

In a mason jar or a heat-resistant pitcher, add 1 tablespoon of dehydrated Thaimee Blue Butterfly Tea to 1 cup of off-the-boil water (just below boiling point). Let it brew.

If you’d like to make a larger batch, simply maintain the same ratio of tea to water.

Allow the tea to cool to room temperature.
Once cooled, strain out the tea leaves, seal the jar with a lid, and refrigerate until cold.


Step 2: Make a Glass for Yourself (and Your Loved Ones)

  • Fill a glass with ice.
  • Pour your favorite brand of coconut water into the glass, filling it about one-third full.
  • Top up the rest of the glass with the cold blue butterfly pea tea.
  • Garnish as you like — and enjoy!

Notes

  • The brewed blue tea can be stored for up to one week in a sealed container in the refrigerator.
  • Coconut water naturally contains sweetness, so there’s usually no need to add sugar. However, if you prefer a sweeter drink, feel free to add a little simple syrup to taste.
  • Butterfly pea flower is traditionally believed to offer many health benefits. In Thai culture, it’s valued for its antioxidant properties and is thought to help lower blood pressure and promote calmness.
