Goong Pad Khing (Stir-Fried Shrimp With Ginger)

Even though ginger isn’t originally native to Thailand, it has been embraced so fully that it feels like it’s always been part of Thai kitchens. Goong Pad Khing is one of those comforting home-style stir-fries you’ll find across Thailand — quick, simple, and bursting with aromatic flavor. Traditionally, cooks might toss in fresh chilies for heat, but I love swapping them with shishito peppers for a mild, smoky twist. They bring a playful character to this dish, making it even more fun (and delicious!) to eat.

Ingredients

  • 1 lb 450 g shrimp, peeled and deveined
  • 3 cloves garlic minced
  • 2 –3 fresh chilies smashed and sliced (optional, for heat)
  • ¼ cup onion sliced about ½ cm thick
  • 2- inch piece fresh ginger julienned (about ¼ cup), or to taste
  • ½ cup shishito peppers or mini bell peppers sliced
  • 2 Tbsp neutral oil avocado, canola, or vegetable oil
  • 2 –3 Tbsp Thaimee All-Purpose Sauce to taste
  • For serving:
  • Steamed rice Thai rice berry, jasmine, or brown rice

Instructions

  • Heat oil in a wok or large skillet over medium-high heat.
  • Add garlic and Thai chili ; stir-fry until fragrant, about 30 seconds.
  • Bring in onion. Stir occasionally until the onion cooks through, about a min.
  • Toss in the shrimp and stir-fry until they just start to turn pink, 2 mins.
  • Add ginger, peppers and chili, if using. Stir occasionally, for a minute.
  • Drizzle in Thaimee All-Purpose Sauce and toss to coat. Cook for 1–2 more minutes, until shrimp are cooked through and vegetables are tender-crisp.
  • Taste and adjust seasoning if needed. Serve hot with steamed rice.

Notes

This method works beautifully with chicken, pork, tofu, or any protein you like.
If shishito peppers are hard to find, use mini sweet peppers or regular bell peppers.
Authentic Thai versions often include wood ear mushrooms for extra texture — add them if you can.
If you can’t find my Thaimee All Purpose Sauce, use oyster sauce and a dash of soy sauce.
