A Thai Chef’s Guide to Chili Dipping : Nam Prik

It’s often said that my motherland, Thailand, is hard to beat when it comes to bold, vibrant flavors and, at the heart of many of our meals you will find an explosion of taste in the form of Nam Prik, a family of chili dips.

Served alongside a colorful array of fresh and blanched vegetables, or crudités, Nam Prik is a cornerstone of Thai dining, offering endless combinations of spice, tang, and umami.

Here’s my personal guide to mastering the art of Nam Prik.


What Is Nam Prik?

The literal translation of Nam Prik (น้ำพริก) is "chili water" or "chili paste," but don’t let the simplicity of the name fool you.

These dips are packed with flavor, with each variety offering a unique blend of spicy, tangy, salty, and sometimes sweet elements. While the ingredients can vary by region and recipe, the base is often made with chilies, garlic, shrimp paste, lime juice, fish sauce, and other aromatics.

Nam Prik is traditionally served with a platter of fresh, steamed, or grilled vegetables, making it the perfect complement to a light and healthy spread.

1. Nam Prik Kapi (น้ำพริกกะปิ)

  • Made with fermented shrimp paste (kapi), fresh chilies, lime juice, garlic, and palm sugar.

  • Flavor Profile: Intense, tangy, and umami-rich.

  • Pairing: Best with crispy fried mackerel (pla too) and crunchy raw vegetables.

2. Nam Prik Num (น้ำพริกหนุ่ม)

  • A Northern Thai green chili dip made from roasted green chilies, garlic, and shallots.

How to Prepare Nam Prik at Home

Ingredients (for Nam Prik Kapi):

  • 2 tablespoons shrimp paste (kapi)

  • 6 Thai red chilies, or to taste 

  • 4 cloves garlic, or to taste 

  • 2 tablespoons lime juice, or to taste

  • 1 tablespoon fish sauce, or to taste

  • 1 teaspoon palm sugar, or to taste 

Instructions:

  1. Roast the shrimp paste, chilies, and garlic until aromatic.

  2. Pound them in a mortar and pestle (or use a food processor) until a paste forms.

  3. Add lime juice, fish sauce, and palm sugar. Mix until well combined.

  4. Adjust seasoning to taste—it should be a balance of salty, tangy, and slightly sweet.

Serving A Nam Prik Platter

To serve, arrange your vegetables on a large platter around a bowl of Nam Prik. For a more authentic experience, include grilled fish, boiled eggs, or sticky rice as additional accompaniments.
