Asparagus Ricotta Frittata

Family time is my everything. I use our Saturday or Sunday brunch to catch up and this recipe helps me to have no fuss in the kitchen and make our family time delicious and quality! 

Make 2-4 


Ingredients:

3 large organic eggs

1 cup ricotta cheese 

A pinch of salt 

A pinch of pepper 

butter to grease the pan 

½ lb asparagus 

Parmesan cheese, optional 

Chives or basil, optional to garnish 

Thaimee Sweet Chili Sauce 


Preheat the oven to 375 F. 

In a mixing bowl, mix the eggs, ricotta cheese, salt and pepper until well combined. 

Heat a 10-inch skillet over medium heat and grease with butter. Pour the egg mixture into the pan. Lay the asparagus on top to your liking, and make an art! Once the egg mixture is set a bit, transfer the pan into the oven. 

Bake for about 15 minutes or until golden brown. 

Shave some extra parmesan on top and garnish with fresh herbs. 

Serve with your choice of favorite bread and highly recommend it with Thaimee Sweet chili sauce. 


Note:

  1. In the VDO I added extra leftover zucchini flowers from my other dish. There is no waste in my kitchen.
