Lychee Iced Tea

Makes 2 quarts 


Ingredients: 

1½ cups Thai tea powder

1½ cups sugar or to taste 

Ice

1 can lychee, separate lychee meat and syrup

Garnish with edible flowers, mint or Thai basil (all are optional)

 

Directions: 

Bring 8 cups of water to a boil in a medium pot. Once boil, turn the heat off. Stir in the Thai tea powder and sugar.

Cover and steep for about 15 mins. Strain the tea through a fine-mesh strainer and let cool.

Keep in an airtight container in the refrigerator for up to 2 weeks.


To make one drink:

In a tall glass, fill up the ice. Pour in about 2 tablespoons of lychee syrup from the can. Fill up the rest of the glass with the Thai Tea mixture. Garnish with Lychee balls, edible flowers or mint on the top.
