Thai Sweet Chili Egg Tartine

I’d like to share my trick with you to make delicious and beautiful food very doable. It’s great for both your health and soul. Life is busy and very demanding but, trust me, we can find ways to manage it. 

Thai Sweet Chili Egg Tartine (a fancy and French way of saying an open sandwich)

Serves 1 

1 baguette or a bread of your choice (For a baguette,you need about 5” slice and save the rest for more), toasted - optional 

A smear of butter (or coconut oil for a healthier version, which is what I prefer)

2 x eggs boiled for 6 minutes, cut into quarters

A drizzle of Thaimee Sweet Chili Sauce 

Microgreen, optional 

On a piece of bread, smear butter of your choice. Lay your eggs and drizzle about 2 teaspoons of Thaimee sweet chili sauce or to taste. Garnish with microgreen. 

It’s a beautiful dish for a quick and simple breakfast or brunch. It’s sweet, tangy, and it will impress your loved ones and guests. Trust me! 

Notes:

  1. If you can get a fresh baguette, it’s best not to toast and enjoy the charming crusty and soft texture of French bread. 

  2. If you can’t find a baguette, use any bread of your choice. Do not fuss (totally not worth it) and if you want to toast it, please go ahead. You should do what makes you happy! 

  3. 6 mins boiled eggs are my preference. I like the yolk a tiny bit runny. But, for you, do the the boiled eggs that you prefer. 

  4. Here is a geeky chef tips for plating, we tend to do odd numbers rather than even numbers - you could see I would do 3 springs of microgreen cilantro rather than 2 or 4. Somehow it looks better.

  5. Have a great time cooking with your music. Think good thoughts. Trust me, it helps!
