Thai Sweet Chili Glazed Ribs

This recipe is dear to my heart. My mom made it for me when I was a kid and I put a spin on it with my Thaimee Sweet Chili Sauce. It’s easy to make; you can fry it, bake it or, for a healthier option, cook it in an air fryer! 

Serves 4


Marinade 

6 cilantro roots, cleaned and chopped

1/4 cup garlic cloves , smashed and chopped

1 teaspoon whole white peppercorns (black peppercorns are also fine) 

¼ cup fish sauce 

¼ cup oyster sauce 

2 tablespoons turbinado sugar (or brown sugar)

2 lbs ribs, cleaned and cut into pieces

Vegetable oil (optional, for frying)

Thaimee Sweet Chili Sauce 


———

Garnish (optional) 

In picture, pickled cabbage 

In picture, fried Thai basil 

Chopped cilantro or spring onion 


Making marinade 

Suggestion 1. In a stone mortar, combine the cilantro roots, garlic and peppercorn and pound with a pestle for about 3-5 minutes, until it forms a paste. Transfer to a large bowl and bring in the fish sauce, oyster sauce and sugar. Mix well. 

Suggestion  2. In a blender, add together all the ingredients until well blended. 

2.Marinate.

In a large mixing bowl, massage the marinade into the  ribs. Cover and leave in a refrigerator for at least 45 mins or overnight. 


Cook the ribs 

Suggestion 1. Deep fry  In a wok or a medium saucepan, heat about 2 quarts of oil over a medium-high heat until it reaches 375 F. Add the ribs and fry for about 5-7 minutes, until golden brown. Using tongs, remove the ribs and place on a baking sheet or a plate lined with paper towels, to drain and excess oil.

Suggestion  2. Air fry Preheat the airfryer to 195C/380F. Once it reaches the required temperature, add the ribs to the air fryer. Cook for about 35 minutes.
