Wholesome Salad Bowl
If you have been following me, you know by now, I believe you are what you eat and when you eat well you will live well. So this concept of a wholesome salad bowl is something I incorporate into my daily life. It’s simple, no fuss, pretty and delicious. I love the anti-inflammatory properties in honey, Turmeric and the spice from my Thaimee Laab chili. This one bowl is full of lovely things.
Serve 2-4
Salad
4 cups mixed green salad of your choice
1 cup cucumber or other crunch and crisp vegetables of your chioce
1 cup Ube, cubed and steamed
¼ cup hemp seeds or other grains of choice, or to taste
Boiled eggs of your choice (see note)
Finishing salt, optional
Edible flower, option
Spiced Honey Dijon Dressing
Serve 4-6
2 tablespoon Dijon mustard
2 tablespoon olive oil
2 tablespoon fresh lemon juice and zest
1 tablespoon honey
½ teaspoon Thaimee Laab Chili
Pinch of salt
Step 1: Make a dressing
In a small mixing bowl, mix everything together until well combined.
Step 2: Assemble and serve
Toss green salad, cucumber, ube, hemp seeds and spiced honey Dijon dressing together until everything is well combined.
Transfer to a bowl, add the boiled eggs. Sprinkle a pinch of finishing salt and edible flower and serve.
Notes:
My preference is a 6 mins boiled egg but you can use any cooking time of the eggs to your liking.
I give an egg per person per portion but you can adjust to your preference as well but remember, portion control is always a great idea.
You can add on other sources of protein such as chicken breast, chickpea, avocado and or grilled salmon.
Leftover salad dressing can be stored in a airtight container for up to 2 weeks.
