Rice Berry Fried Rice
Good health is the foundation of a happy and well lived life. Simple as that. A healthy dish doesn’t have to be too crazy with weird ingredients. This recipe is a great example. I hope you get to try and incorporate this into your everyday life.

Rice Berry Fried Rice
Ingredients
- 2 tbsp olive oil
- ½ lb 16-20 count shrimp cleaned and deveined or protein of your choice
- ¼ cup thinly sliced shallots
- 2 cloves garlic smashed, and chopped
- 1 cup vegetable of choice
- 2 eggs
- 2 cups cooked rice berry rice
- 2 tablespoon Thaimee House Sauce or to taste
- A sprig scallions or cilantro, chopped optional
Instructions
- Garnish with a slice of lime.
- In a hot pan or wok, heat the oil over medium high heat. Once hot, saute the shrimp and shallot until the shrimps are slightly pink, about 2 minutes.
- Add the vegetables and saute until the vegetables cook or charred.
- Crack the eggs into the pan. Be patient and let the egg white cook a little bit and the yolks are firming up (to prevent the fried rice to be mushy), about 2 mins. Use the spatula to break the egg and lightly scramble.
- Add in the rice and Thaimee House Sauce.
- Saute everything together until very well blended.
- Serve hot with a squeeze of lime for more zing.

- This is a Thai way of doing. There is no right or wrong when it comes to each individual cooking method. You can use any protein of your choice but make sure that you time your cooking time right.
- Most of the time, in my household, we love to incorporate vegetables onto our meals and dishes. Here are example of vegetables that are good for fried rice:
- Gailan or chinese broccoli
- Broccoli
- Carrots, especially to pair it with zucchini (in the VDO), carn and peas.
- Thais love their fried rice dried. We don’t like it to be mushy. That means, it has to be cooked with a high heat and cooked the eggs before putting the rice in.
