Baked Salmon With Pineapple Sweet Chili Sauce
A bright, bold, and simple dish that brings Thai-inspired flavor to the everyday table. Tender roasted salmon meets juicy pineapple and a vibrant glaze made with my Thaimee Sweet Chili Sauce — perfectly seasoned, no extra mixing needed.
However, if you don’t have an access to my sauce, you can use other brand of sweet chili sauce and I would recommend to season to your taste with a splash of fish sauce and extra pineapple juice.

Baked Salmon With Pineapple Sweet Chili Sauce
Ingredients
For the Salmon:
- 2 6–8 oz salmon fillets skin-on or off
- 1/2 tbsp olive oil or to taste
- Salt and pepper or to taste
For the Sauce & Garnish:
- 1/2 cup Thaimee Sweet Chili Sauce or other brand
- 1/2 cup fresh or frozen pineapple if using fresh pineapple, chopped into a small bite size.
- a splash of pineapple juice or orange juice, for extra brightness optional
- chopped fresh cilantro, mint, or Thai basil for garnish
- Chopped cashews, walnuts, or hazelnuts for added crunch
Instructions
Preheat the oven:
- to 375°F (190°C). Line a baking sheet or tray with parchment paper or foil for easier cleanup (or leave unlined for rustic presentation).
Prep the salmon:
- Pat the salmon fillets dry.
- Rub or brush with olive oil and season lightly with salt and pepper.
Bake the salmon:
- Place the fillets skin size down on the prepared tray and bake for 12–15 minutes, or until the salmon is just cooked through and flakes easily with a fork.
Make the sauce:
- In a small saucepan over medium-low heat, combine Thaimee Sweet Chili Sauce and chopped pineapple. Bring the pan to a boil.
- Simmer gently for 3–5 minutes until the fruit softens and the flavors meld. Add a splash of pineapple or orange juice for extra brightness, if desired.
Sauce & serve:
- Spoon the warm pineapple sweet chili sauce over the baked salmon.
- Garnish with fresh herbs and optional chopped nuts for texture and color.
