Ingredients

For the Salmon:

  • 2 6–8 oz salmon fillets skin-on or off
  • 1/2 tbsp olive oil or to taste
  • Salt and pepper or to taste

For the Sauce & Garnish:

  • 1/2 cup Thaimee Sweet Chili Sauce or other brand
  • 1/2 cup fresh or frozen pineapple if using fresh pineapple, chopped into a small bite size.
  • a splash of pineapple juice or orange juice, for extra brightness optional
  • chopped fresh cilantro, mint, or Thai basil for garnish
  • Chopped cashews, walnuts, or hazelnuts for added crunch

Instructions

Preheat the oven:

  • to 375°F (190°C). Line a baking sheet or tray with parchment paper or foil for easier cleanup (or leave unlined for rustic presentation).

Prep the salmon:

  • Pat the salmon fillets dry.
  • Rub or brush with olive oil and season lightly with salt and pepper.

Bake the salmon:

  •  Place the fillets skin size down on the prepared tray and bake for 12–15 minutes, or until the salmon is just cooked through and flakes easily with a fork.

Make the sauce:

  •  In a small saucepan over medium-low heat, combine Thaimee Sweet Chili Sauce and chopped pineapple. Bring the pan to a boil.
  • Simmer gently for 3–5 minutes until the fruit softens and the flavors meld. Add a splash of pineapple or orange juice for extra brightness, if desired.

Sauce & serve:

  • Spoon the warm pineapple sweet chili sauce over the baked salmon.
  • Garnish with fresh herbs and optional chopped nuts for texture and color.
