Ingredients
Spiced Maple Roasted Carrots
- 2 medium carrots peeled & sliced on a bias
- 1 tbsp olive oil
- 1 tbsp pure maple syrup
- ½ –1 tsp Thaimee Laab chili powder to taste*
- Salt to taste
Maple Whipped Ricotta
- ½ cup whole milk ricotta cheese
- 1 tsp lemon zest
- 1 tbsp olive oil
- 1 tsp maple syrup
- Pinch of salt
- Toast & Garnish
- 2 slices sourdough or multigrain bread toasted
- Optional: microgreens fresh herbs, crushed pistachios or pepitas, extra maple syrup, or chili powder
Instructions
Roast the Carrots
- Preheat oven to 400°F (200°C). Toss carrots with olive oil, maple syrup, Thaimee Laab chili powder, and salt. Spread on a lined baking sheet and roast for 20–25 minutes, flipping halfway through, until tender and caramelized.
Whip the Ricotta
- In a food processor or mixing bowl, blend ricotta with lemon zest, olive oil, maple syrup, and a pinch of salt until smooth and fluffy.
Assemble the Toast
- Spread whipped ricotta generously on toasted bread. Top with spiced maple carrots. Garnish with fresh herbs, microgreens, or a sprinkle of nuts.
