Spiced Maple Roasted Carrot & Whipped Ricotta Toast
A bold, balanced toast that brings together sweet, spice, and creaminess. Featuring Thaimee Laab chili-spiced maple carrots and whipped ricotta with a touch of maple, it’s nutrient-packed and full of flavor.

Instructions
Roast the Carrots
Preheat oven to 400°F (200°C). Toss carrots with olive oil, maple syrup, Thaimee Laab chili powder, and salt. Spread on a lined baking sheet and roast for 20–25 minutes, flipping halfway through, until tender and caramelized.
Whip the Ricotta
In a food processor or mixing bowl, blend ricotta with lemon zest, olive oil, maple syrup, and a pinch of salt until smooth and fluffy.
Assemble the Toast
Spread whipped ricotta generously on toasted bread. Top with spiced maple carrots. Garnish with fresh herbs, microgreens, or a sprinkle of nuts.
