Ingredients

Spiced Maple Roasted Carrots

  • 2 medium carrots peeled & sliced on a bias
  • 1 tbsp olive oil
  • 1 tbsp pure maple syrup
  • ½ –1 tsp Thaimee Laab chili powder to taste*
  • Salt to taste

Maple Whipped Ricotta

  • ½ cup whole milk ricotta cheese
  • 1 tsp lemon zest
  • 1 tbsp olive oil
  • 1 tsp maple syrup
  • Pinch of salt
  • Toast & Garnish
  • 2 slices sourdough or multigrain bread toasted
  • Optional: microgreens fresh herbs, crushed pistachios or pepitas, extra maple syrup, or chili powder

Instructions

Roast the Carrots

  • Preheat oven to 400°F (200°C). Toss carrots with olive oil, maple syrup, Thaimee Laab chili powder, and salt. Spread on a lined baking sheet and roast for 20–25 minutes, flipping halfway through, until tender and caramelized.

Whip the Ricotta

  • In a food processor or mixing bowl, blend ricotta with lemon zest, olive oil, maple syrup, and a pinch of salt until smooth and fluffy.

Assemble the Toast

  • Spread whipped ricotta generously on toasted bread. Top with spiced maple carrots. Garnish with fresh herbs, microgreens, or a sprinkle of nuts.
