Ingredients

For tart

  • 1 sheet puff pastry store bought is fine, thawed
  • 4-5 whole candy cane beets peeled and thinly sliced
  • 1 egg beaten, set aside

For the whipped goat cheese

  • 6 oz goat cheese softened
  • 1 tablespoon honey or to taste and save some extra for drizzling
  • 10 leaves Thai basil finely chopped
  • 1 whole citrus zest and juice a lemon or an orange
  • a pinch of salt
  • a pinch of cracked black pepper

For garnish

  • Fresh Thai basil leavesCrushed pistachios (optional, for crunch)Drizzle of honey

Instructions

Roast the beets

  • Preheat the oven to 400F  (200°C)
  • Wrap each beet individually in aluminum foil and place them on a baking tray.
  • Bake for 2 hours, then remove from the oven and allow to cool.
  • Once cooled, unwrap and discard the foil.
  • Peel the beets, quarter them, and set aside.

Make the Whipped Goat Cheese

  • In a mixing bowl, combine the goat cheese, honey, Thai basil, lemon or orange zest, lemon or orange juice, salt, and pepper and whisk until everything is creamy and well blended.

Assemble and bake the tart

  • Preheat the oven to 400F  (200°C)
  • Roll out the puff pastry on a lightly floured surface and trim it into a rectangle, approximately 10×6 inches. Use a fork to prick holes across the surface—this helps the tart base bake up crispier.
  • Spread the whipped goat cheese mixture evenly over the puff pastry base.
  • Arrange the roasted beet slices on top, slightly overlapping them in a shingled pattern for visual appeal. Leave about an inch of space around the edges, then fold the edges inward to create a border for the tart.
  • Brush the puff pastry border with egg wash to give it a golden, glossy finish when baked.
  • Bake for 12–15 minutes, or until the pastry is puffed and golden brown. Let the tart cool slightly, then garnish and serve.
