Blue Coconut Water

I grew up in Thailand, where it’s common to have fresh, sweet and affordable coconut water as part of daily life. Now that I am living in NYC, it’s impressive to see that the drink has made its mark as a healthy (but quite pricey) drink. It gives me pride in my motherland! As a chef, I like to elevate my work and I have turned a clear super drink into a gorgeous concoction that is even more refreshing and nutritious.

Step 1 Making the blue the butterfly pea tea.

In a mason jar or a heat resistant pitcher, add 1 tablespoon of dehydrated Thaimee blue butterfly tea to 1 cup of off the boil water or tea kettle to brew the blue tea. If you want to make more be sure to stick to the same ratio of tea leaves to the water.

Once the tea is at room temperature, discard the leaves, seal the jar lid and put it in the refrigerator until cold.

Step 2 Make a glass for yourself and your loved ones.

Fill a glass with ice. Pour in your favorite brand of coconut water to about 1/3 of a glass.

Fill the rest of the glass with cold blue butterfly pea tea.

Garnish as preferred and enjoy!!

Note :

  1. The tea can keep up to a week in a closed lid container in the refrigerator.

  2. Because coconut water contain natural sweetness, you do not need to add sugar. But if you prefer it to be sweeter, add syrup.

  3. Butterfly pea flower is believed to be medicinal and contain many antioxidant properties. Thai people believe it can help lower blood pressure and have calming effects. I encourage you to learn more about the benefits of this flower.
