Date Night Roast Chicken
Cooking is my love language. How I care for my loved ones. Luckily I live with a man who loves my food! So our perfect date night is a lovely meal, great wine and our conversation. Here is one of the roast chicken recipes we love.

Ingredients:
1 lb chicken thighs, see note
Olive oil
2 tablespoons fish sauce
¼ cup Thaimee sweet chili sauce
1 whole garlic
Turnip, quartered, see note
Baby carrots or carrots, see note
Cherries, see note
Salt and pepper
Preheat the oven to 450 F
In a baking tray or pan, marinade the chicken with a brush of olive oil, fish sauce and Thaimee sweet chili sauce. Set aside at room temperature.
While the chicken is marinating, do the knife cuts.
Place garlic, turnip, carrots and cherries on the baking tray. Make them look pretty. Drizzle the olive oil on them and season with salt and pepper.
Bake for about 45 mins or until the chicken is cooked through. The skin should be crispy and caramelized.
Notes:
I prefer bone in and skin on organic or all natural chicken thighs.
I love cooking with fruits and adding fruits onto my roast chicken tray adds a touch of surprise to it. Cherries and peaches are good in the summer. In the wintertime, pears and apples are great as well.
If not turnip, potatoes are a great choice as well.
If you clean your carrots well, you do not need to peel. For baby carrots, trim them well. For the whole carrots, make sure you cut them into the same size to evenly and properly cook, about ½ inch thick. Or the same size as turnip
