Roasted Beets, Honey, Yogurt and Grains
Beets are nutritious and if you know how to cook them right, they are lovely and not messy at all. I have found my way and I am excited to share this with you. Here is a no-recipe recipe for you. Don’t be afraid and have fun with it.
Ingredients:
6 medium size beets
Olive oil
Salt and pepper
Yogurt, to taste
Honey, to taste
Grains of choice
Finishing sea salt
Preheat the oven to 400 F.
Scrub and wash the beets well. Trim the stem, if needed. Pad them dry with towels. Transfer them into a bowl, drizzle the beets with olive oil and season them with salt and pepper. Make sure the oil and seasonings are well coated.
Wrap each beet with aluminum foil. Place them back into the baking sheet. Roast for about 45 minutes to an hour depending on the thickness and size of the beets. Once the paring knife can easily run through the meat of the beets, they are well cooked and ready to serve. Take them out of the oven and let them cool.
Once the beets’ temperature has cooled down, quarter them into bite size pieces. Set aside.
In a small bowl, smear about ¼ cup of yogurt onto the bottom. Bring the beets back and lay them on top of the yogurt. Drizzle with honey and grains of choice. Finish with sea salt and enjoy.
Notes:
If you wash the beets thoroughly, you don’t need to peel them which I prefer because I can preserve more of their nutrients.
You can roast the beets ahead of time and use this recipe as your meal prep as well.
