No-Fuss Turkey & Spinach Lasagna

Ingredients
For the Sauce:
2 tablespoons olive oil
2 tablespoons chopped onion
2 tablespoons chopped garlic
1 lb ground turkey
3 cups marinara or tomato sauce (homemade or a 24 oz can)
2–3 tablespoons chopped Italian herbs (basil, oregano, or your favorite mix)
A pinch of salt or a dash of fish sauce (my Thai twist!)
For the Filling:
1 (16 oz) bag frozen spinach or fresh spinach
2 cups mozzarella cheese, grated or hand-shredded
Grated parmesan for topping
1 egg (optional, for binding)
For the Layers:
Lasagna noodles (regular or no-boil, whole wheat preferred)
Instructions
1. Prepare the Sauce:
Heat a skillet over medium-high heat. Add olive oil, followed by onion and garlic. Cook until golden, about 1–2 minutes.
Add ground turkey, stirring occasionally until browned. Season with salt or fish sauce.
Stir in spinach (you can cook it frozen), marinara sauce, and Italian herbs. Let the mixture simmer for about 20 minutes.
2. Assemble the Lasagna:
Preheat your oven to 375°F (190°C).
In an 8x8-inch baking dish, spread a thin layer of sauce at the bottom. Add a layer of noodles, then a layer of shredded mozzarella. Repeat these layers until the ingredients are used, finishing with a layer of sauce and cheese on top.
Use a microplane to shave parmesan over the top until fully covered.
3. Bake the Lasagna:
Cover the dish with foil and bake for 25–30 minutes. Remove the foil and bake for another 15 minutes until bubbly and golden on top.
4. Serve:
Let the lasagna cool slightly, then serve while it’s hot.
Notes & Tips
This turkey and spinach lasagna is a lighter take on the traditional beef version but still hearty and flavorful.
For added texture, try mixing in mushrooms or other vegetables.
Whole wheat noodles make it even more nutritious without sacrificing taste.
