Cook Time: 10 minutes
Serves: 4

Ingredients

  • 1.5 lbs (700g) calamari, cleaned and cut into rings

  • 3 small shallots, roughly chopped

  • 6 cloves garlic, crushed

  • 1 stalk lemongrass (bottom half only), smashed and cut into 2-inch sections

  • 5–6 thin slices galangal

  • 1/2 cup cherry tomatoes, halved

  • 5 kaffir lime leaves, roughly torn

  • 2–3 small turmeric roots, thinly sliced on a bias

  • Fresh Thai chilies, crushed (to taste)

  • 1 tablespoon fish sauce (or to taste)

  • 2 tablespoons tamarind juice (or to taste; lime juice can be substituted)

  • Fresh cilantro or green onion, chopped (for garnish)

Instructions

1. Prepare the Soup Base

  • Bring 3 cups of water to a boil in a pot.

  • Add shallots, garlic, lemongrass, galangal, kaffir lime leaves, and turmeric. Let the aromatic base simmer for a few minutes to release flavors.

  • Stir in cherry tomatoes.

2. Cook the Calamari

  • Lower the heat to maintain a gentle simmer and add the calamari.

  • Cook for 2–3 minutes, or until the calamari is tender and no longer translucent. Avoid overcooking to keep it soft and tender.

3. Season the Soup

  • Stir in tamarind juice and fish sauce, adjusting to taste.

  • For added heat, crush some fresh Thai chilies into the soup.

4. Serve and Garnish

  • Ladle the soup into bowls.

  • Garnish with chopped cilantro or green onion.

  • Serve on its own or with jasmine rice for a heartier meal.

Notes

  • Cooking Calamari: To keep the calamari tender, cook briefly and avoid overcooking.

  • Adjusting Tanginess: Increase or reduce tamarind juice to suit your taste preferences.

  • Spice Level: Add more Thai chilies or a splash of chili oil for extra heat.

  • Vegetarian Option: Replace calamari with tofu and use vegetable stock instead of water.

Pro Tips

  • If substituting lime juice for tamarind, reduce the heat before adding it to prevent the broth from turning bitter.

  • Use the freshest herbs and spices for the best aroma and flavor.

This Spicy Calamari Turmeric Soup is a delightful fusion of bold Southern Thai flavors and comforting warmth. Whether you're preparing a cozy weeknight dinner or an impressive dish for guests, it’s sure to be a crowd-pleaser. Enjoy!
