Zucchini Oatmeal Breakfast Cookies

This healthy wholesome breakfast in the form of a cookie is a wonderful way to start my day. I know it will do magic to you too. 

Make about 12 cookies

Ingredients:
1 medium size zucchini, about two cups, grated

2 cups almond flour 

1 cup oatmeal 

2 eggs

Almond butter

¼ cup honey 

1/2 teaspoon cinnamon powder (or replace with Thaimee chili power)

1/4 teaspoon nutmeg powder (or replace with Thaimee chili power)

½ cups healthy nuts of your choice or chopped 72% dark chocolate, optional

Vanilla extract

Finishing salt


Preheat the oven to 350 F. 

In a mixing bowl, mix all the ingredients together until well combined. 

Use ¼ cup or a scoop to scoop a cookie mixture onto the sheet tray that is lined with parchment paper or a silicone baking mat. 

Bake for 12 minutes or until the cookies are golden brown. 

Rest on a wire rack until the cookies are cool and enjoy. 


Notes:

  1. As much as I named it a breakfast cookie, this recipe actually serves well as an energy booster afternoon snack. 

  2. I did not create this recipe to be sweet. 

  3. You can add on healthy nuts such as walnuts or macadamia, dark chocolate (preferably 72%) or hemp seeds to give an extra crunch.
