Serves 2

Ingredients:

1 cup Thai rice berry (or any rice of your choice)

2 Italian sausages (remove casing if needed)

1 tbsp olive oil (or any preferred cooking oil)

1/2 cup Shishito peppers, washed and patted dry

1/2 onion, thinly sliced

2 cloves garlic, minced

2 tbsp Thaimee All-Purpose Sauce (or to taste)

Instructions:

1. Cook the rice:

Cook the Thai rice berry according to the package instructions. This usually takes about 30 minutes. Once done, set aside to cool slightly.

2. Sauté the garlic and onion:

Heat 1 tbsp olive oil in a large skillet over medium heat. Add garlic and onion, and sauté for about 1 minute until the garlic is fragrant and the onion is translucent.

3. Cook the sausage:

Crumble the Italian sausages into the pan and cook, stirring occasionally, until browned and cooked through, about 6–8 minutes. Remove the sausage from the skillet and set aside.

4. Cook the peppers:

In the same skillet, add the sliced Shishito peppers. Sauté for about 2–3 minutes until softened but still vibrant.

5. Combine and season:

Season with Thaimee All-Purpose Sauce. Stir well until everything is cooked through and well blended.

6. Assemble the bowl:

Scoop the cooked Thai rice berry into bowls and top with the sautéed sausage and pepper mixture.

This dish combines the earthy, nutty flavor of Thai rice berry with the savory, slightly spicy Italian sausage and the light heat from Shishito peppers. It’s a perfect, hearty meal for any day of the week!
