A Lovely Summer Salad

Ingredients

Salad - Summer produces such as

  • Herricot vert
  • Tomatoes
  • Corn
  • Peaches

Thai green goddess salad dressing - Make about 2 cups

  • 1 cup Thai basil
  • ½ cup cilantro
  • 5 Makrut lime leaves
  • 2 garlic cloves
  • 1 green chili to taste
  • 2-3 pieces anchovy
  • Drizzle of honey about 1 teaspoon
  • A juice from half a lime or lemon
  • 1 cup yogurt or mayonnaise
  • ½ cup extra virgin olive oil
  • A pinch of salt

Instructions

Make a salad.

  • Clean, trim and slice or cut your choice of summer produce into your linking. Put everything into a bowl.

Make a dressing.

  • Put everything in a blender and blend until smooth.

Mix it up.

  • Drizzle the dressing onto your salad. Mix it well and enjoy.

Notes

  • To make it more wholesome you can serve this salad with grilled chicken or salmon or boiled eggs of your choice. 
  • If you like it more crunchy, you can add pistachios or walnuts as an excellent topping.
