Ingredients
Salad - Summer produces such as
Herricot vert
Tomatoes
Corn
Peaches
Thai green goddess salad dressing - Make about 2 cups
1
cup
Thai basil
½
cup
cilantro
5
Makrut lime leaves
2
garlic cloves
1
green chili
to taste
2-3
pieces
anchovy
Drizzle of honey
about 1 teaspoon
A juice from half a lime or lemon

cup
yogurt or mayonnaise
½
cup
extra virgin olive oil
A pinch of salt
Instructions
Make a salad.
Clean, trim and slice or cut your choice of summer produce into your linking. Put everything into a bowl.
Make a dressing.
Put everything in a blender and blend until smooth.
Mix it up.
Drizzle the dressing onto your salad. Mix it well and enjoy.

Notes
To make it more wholesome you can serve this salad with grilled chicken or salmon or boiled eggs of your choice.
If you like it more crunchy, you can add pistachios or walnuts as an excellent topping.
