Orange Yogurt Bundt Cake with Honeyed Ginger Orange Marmalade

Ingredients

Orange Yogurt Bundt Cake

  • cups all-purpose wholewheat flour spelt or einkorn works beautifully
  • 2 tsp baking powder
  • ½ tsp baking soda
  • ½ tsp fine sea salt
  • cups date sugar
  • Zest of 2 oranges
  • 3 large eggs room temperature
  • 1 cup plain yogurt full-fat preferred
  • ¾ cup extra-virgin olive oil
  • ½ cup fresh orange juice
  • 1 tsp vanilla extract

Honeyed Ginger Orange Marmalade

  • 3 large oranges peeled and thinly sliced (seeds removed)
  • 2 tbsp fresh ginger very thinly sliced
  • 2 tbsp honey adjust to taste
  • ½ cup fresh orange juice
  • Pinch of sea salt

Instructions

Bake the orange yogurt bundt cake

  • Preheat oven to 350°F (175°C). Generously grease a Bundt pan with olive oil and lightly flour it.
  • In a bowl, whisk flour, baking powder, baking soda, and salt.
  • In a large bowl, rub the orange zest into the date sugar until fragrant.
  • Whisk in the eggs one at a time, then add the yogurt, olive oil, orange juice, and vanilla until smooth.
  • Gently fold in dry ingredients just until combined.
  • Pour batter into the prepared pan and smooth the top.
  • Bake 45–55 minutes, until a skewer inserted comes out clean.
  • Cool for 15 minutes, then invert onto a rack and cool completely.

Make the honeyed ginger orange marmalade

  • Combine all ingredients in a small saucepan.
  • Bring to a gentle simmer over medium heat.
  • Cook 20–30 minutes, stirring occasionally, until oranges are soft and the mixture becomes glossy and syrupy.
  • Remove from heat and let cool slightly — it will thicken as it rests.
  • Spoon the marmalade generously over the cooled bundt cake. Delicious on its own or with a dollop of honey-whipped yogurt.
