Orange Yogurt Bundt Cake with Honeyed Ginger Orange Marmalade

2½cupsall-purpose wholewheat flourspelt or einkorn works beautifully

½tspfine sea salt
1½cupsdate sugar
Zest of 2 oranges
3large eggsroom temperature
1cupplain yogurtfull-fat preferred
¾cupextra-virgin olive oil
½cupfresh orange juice
1tspvanilla extract
Honeyed Ginger Orange Marmalade
3large orangespeeled and thinly sliced (seeds removed)
2tbspfresh gingervery thinly sliced
2tbsphoneyadjust to taste
½cupfresh orange juice

Instructions
Bake the orange yogurt bundt cake
Preheat oven to 350°F (175°C). Generously grease a Bundt pan with olive oil and lightly flour it.
In a bowl, whisk flour, baking powder, baking soda, and salt.
In a large bowl, rub the orange zest into the date sugar until fragrant.
Whisk in the eggs one at a time, then add the yogurt, olive oil, orange juice, and vanilla until smooth.
Gently fold in dry ingredients just until combined.
Pour batter into the prepared pan and smooth the top.
Bake 45–55 minutes, until a skewer inserted comes out clean.
Cool for 15 minutes, then invert onto a rack and cool completely.
Make the honeyed ginger orange marmalade
Combine all ingredients in a small saucepan.
Bring to a gentle simmer over medium heat.
Cook 20–30 minutes, stirring occasionally, until oranges are soft and the mixture becomes glossy and syrupy.
Remove from heat and let cool slightly — it will thicken as it rests.
Spoon the marmalade generously over the cooled bundt cake. Delicious on its own or with a dollop of honey-whipped yogurt.
