As a chef, I believe we feast with our eyes first. This Summer Garden Flatbread Pizza is my edible canvas. Layered with creamy pesto and cottage cheese, topped with seasonal garden vegetables, and finished with delicate zucchini ribbons, fresh basil, and zucchini blossom petals. In a small bowl, combine the cottage cheese and pesto. Spread this mixture evenly over the flatbreads.
Top with mozzarella, pattypan squash, and sliced mini zucchini.
Drizzle with olive oil and season with salt and pepper.
Bake
Bake for 10–12 minutes, or until the cheese is melted and bubbling and the vegetables are tender.
Prepare the Zucchini Ribbons
Meanwhile, use a vegetable peeler to shave the zucchini lengthwise into ribbons.
Toss gently with a drizzle of olive oil and the lemon juice. Set aside to marinate.
Finish & Serve
Remove the flatbread from the oven and top with the zucchini ribbons, fresh basil leaves and zucchini blossom petals.
Drizzle with olive oil and serve while hot.
