Yogurt Chocolate Mousse Tart With Fresh Blueberries
A clean, nourishing dessert featuring a tender einkorn coconut crust, rich chocolate yogurt mousse, and a crown of farm-fresh blueberries — made with love and mindfulness in every step.
Equipment
- 1 tart pan You can use any shape you wish. My choice today is a rectangular 5 x 14 inch one.
Ingredients
For the Einkorn Tart Crust:
- 1 cup Einkorn Flour You can use whole wheat or almond four
- 1/4 cup coconut oil solid but scoopable
- 1 tablespoon maple syrup or to taste, optional
- Pinch of sea salt
For the Chocolate Yogurt Mousse Filling:
- 1 cup dark chocolate chocolate chips
- 1 tablespoon almond milk or plant base milk
- 3/4 cup Greek yogurt (whole milk preferred)
- 1 teaspoon vanilla extract
- 1 tablespoon maple syrup or to taste
For the Topping:
- 1 cup fresh blueberries washed and pad dry
- shaved chocolate, cacao nibs, fresh mint leaves or edible flower optional for garnish
Instructions
Make the Crust:
- Preheat oven to 350°F (175°C). In a bowl, combine einkorn flour, coconut oil, maple syrup (if using), and sea salt. Mix with your fingers until the dough holds together like wet sand. Press evenly into a tart pan.
- Prick the bottom with a fork and bake for 12–15 minutes, or until lightly golden.
- Let cool completely.
Make the Chocolate Yogurt Mousse:
- Melt the dark chocolate over a double boiler or in short bursts in the microwave until smooth. Let cool slightly.
- In a bowl, whisk together the Greek yogurt and vanilla extract and maple syrup. Gently fold in the melted chocolate until fully combined and creamy.
Assemble the Tart:
- Pour the chocolate mousse into the cooled crust and smooth the top. Refrigerate for at least 2 hours, or until fully set.
Finish and Serve:
- Top the set mousse with fresh blueberries. Take your time placing each berry — letting it become a quiet, meditative moment.
- Garnish with extra chocolate shavings, mint leaves or edible flour if desired. Serve chilled.
